With this wine all of the components come from our Estate. The wine has a delightfully savoury nose, filled with Tabacco, spices and pencil shavings. On the palate the Cabernet Franc comes to the fore and gives a lovely Black Olive and Fynbos palate. The Merlot makes the wine velvety smooth and rounds of the tannins structure beautifully.

Winemaking Notes
After the harvesting of the grapes the must has been cold soaked for 7 days at a temperature of 7°C. Thereafter it was fermented for 8 days in open concrete tanks with 5 punch downs a day. Finally the must was oaked for 12 months in French Oak barrels. After 12 months only 3 of the best barrels were chosen to make up the compenents for The Lynx 2016. The wine was in the end matured for a total of 24 months in 50% 1st fill and 50% 2nd fill.

Pairing
This wine drinks beautifully with slightly heartier meals, like Pot-Roasted Lamb Shanks or strong cheeses. Winter evenings in front of the fire is also a great pairing.

Drinking well now, but perfect after aging for 4-15 years.
