This wine is made from a 100% Estate grown Pinot Noir. Typically, warmer climate Pinot Noir gives a lot of bright red berries on the nose with hints of sour cherries. Behind all of this are hints of forest flour. The wine is extremely elegant on the palate with soft tannins and medium-long finish.

Winemaking Notes
The grapes were harvested early in the morning to make sure that they are cool when they enter the cellar to retain freshness. Once the grapes where destemmed (only 70%), it was left in open fermenters for 5 days. The 30% whole bunches lead to a more perfumed and structured wine. After fermentation the wines were left for a further 5 days. Hereafter the wine was pressed with basket presses and aged for 12 months in French Oak (no 1st fill).
