Platters Wine Guide: 80 Points
Grape Variety: 100% Merlot
The Merlot is harvested early in the season to retain the natural acidity, which makes the rosé so fresh and unique. Once harvested, the grapes are lightly pressed for less than two hours to reduce extraction of colour and tannins. The juice is settled for 24 hours after which the yeast is added. The juice is then fermented in Stainless Steel tanks for roughly seven days.
